Here is a great recipe straight from my dietician for something to eat when you’re getting past your sugar cravings. It also has lots of healthy fiber! Remember, coconut oil hardly tastes like coconut at all!
Karen’s Incredible Edible Healing Coconut Fudge
- 6-8 Tblsp. coconut oil (need to heat to soften)
- 8 oz. almond butter, room temperature
- 3 packets of stevia or 1/8 tsp. stevia pwd.
- 1/2 cup flaxseed meal (for fiber)
- 3 Tblsp. cocoa powder
- 1 Tblsp. cinnamon
Mix oil and butter until smooth. Stir in rest of ingredients. The batter will be sticky. Press into an ungreased 9 X 9″ pan. Add pecans or walnuts on top if you like. Refrigerate until solid and then ENJOY!
